Quinoa Summer Dill Salad

Quinoa Summer Dill Salad

  • 2 cups uncooked quinoa
  • 6 baby bell peppers
  • 1 large cucumber
  • 1 lbs cherry/grape tomatos
  • 1/2 cup feta cheese
  • 1/4 cup greek olives

Dill Vinaigrette

  • 3/4 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1/2 cup greek yogurt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 2 drops Dill oil
  • 1 pinch salt


  • Cook quinoa according to directions on package and let cool
  • Cut up all vegetables and combine with olives, cheese, and cooked quinoa
  • Combine all dressing ingredients and blend together until smooth
  • Toss salad with dressing and chill
  • TIP: If you don't have Dill essential oil, try Marjoram, Basil, Cilantro, Coriander, or Lemon essential oil.
